The Last of Corinna's Pics

    This morning I found the brine has become a little bit turbid, then I found it became a little more turbid one hour ago. But the brine does not taste sour yet. I think for the time being, everything is going as sheduled.

    Then, I start to think about the second stage , because the pickled cabbage seems to be ready in a week or so.

    yes, Sauerkraut is my favorite, too, and I'm going to try it after my cabbage makes the debut in sarmale.

  4. Hi Ekaterina & Dana

    Oh ladies, I cannot stop with laughing .... .

    So there is a slight difference between the Romanian pickled cabbage and the Sauerkraut (the basis of Sauerkraut is the white cabbage). LOL!

    Obviously you take the green one (we call that one Chohl!) and the white one is the Chabis!!) for beeing correct. Ha, Ha.

    I am a lazy cook, if I make Sauerkraut it is the "ready to cook" one. My mother used to buy it raw, but already pickled.

    She made it always with an small made?? Aple to take out a bit the sourness and at the end she gave some white wine into the Sauerkraut.

    It is sad, I cannot ask her again because she died already 10 years ago.

    But I am sure, if she reads our discussion about Green cabbage and Sauerkraut she will smile.

    Your cabbage is on its good way! I think in 5-7 days it will be ready for sarmale! I told you, it depends on the warmth from the room.
    As you said, everything is going as schedule!

    I'm sorry you lost your mom! I lost mine three years ago and I'm sure she would smile if she would read our comments about any kind of cabbage too!:-))

    Sure ! your mother enjoys reading our high-level (!) discussion on the cabbage ! and I hope my mother joins your mother. The double disscussion in the high up & on the ground.

    The problem, however, is that we don't have the white cabbage !, Nicoletta ! I think almost 99.9% of our cabbage is the green one, and the little rest is the red one. So my idea is this ; When I remove some green leaves from the green cabbage, the white leaves appeare, and I use this white one for the Sauerkraut.

    btw, did you check ALS ? Nicoletta ? ...

    yes, thanks to you, I'm preparing the cabbage, dana ! The warm temperature, OK. and I think I need some advices before I start the second stage, and thanks in advance, dana !

    Well, it's nice to think about our mothers ( your, Nicoletta's, and my ) read our serious cabbage talk ! I'm sure they enjoy it. ( mine, 1 & half year ago )

    I am sure our mothers have found together and they made for sure an interesting trio too.

    Regarding Sauerkraut. In Switzerland you can buy it in the Supermarket, in ideal packages (raw or already cooked). It is even valid for, I presume half an year? It should be also a quite natural thing.

    Even more, they sell it in glasses or tins? (I think the German product).

    Maybe you have the chance to buy it in a huge international supermarket in Tokyo?? Or the fresh white cabbage too, what would be perfect.

    With the green cabbage, hmmmm I think it will be a bit difficult! Or maybe you will get the the Japanese variation of Sauerkraut??!! LOL!

    You could buy the basic thing and "pimp" it up with the apple and the white wine like my mother did in the good old times.

    Another option would be to try out the Swiss Rösti. Ha, ha.

    We say also Präservativ for the condom!! LOL!

    Yes, I can buy the Sauerkraut ( German product ) in some big supermarket in Tokyo. But I think I'd like to try it ... ;-))) The home-made is the best if there is enough time to make it.

    The relationship between maestro Welser-Most and Zurich opera has been long. It was officially from 1995 to 2008. His wife is from Liechtenstein and he lives or lived in Liechtenstein.
